Design Challenge:

Patrick Stein & Associates was asked to provide a design solution to address the increased customer volume that had grown since we had completed the original which opened in 1984. The primary slow point was the cashiers stands. The queuing that resulted backed up into the Servery, blocking access to the counters during peak meal times.

The solution was to cut a window into a shear wall at the West end of the Servery and there by increase the aisle space. This also provided an opportunity to add an additional serving counter with operator service from space that had previously been part of the dining room. Since this was a major change, it was decided to completely remodel the Servery changing not only the counters but also the entire decor. The old Soup/Salad island was replaced with a double sided Beverage Island and the previous three cashier lines were increased to four. The changes have resulted in a much easier flow of customers through the Servery and increased sales far beyond projections.
